Lentil Soup

2 Cans of Lentils
1 Carton of Vegetable Broth
2 Cups of water
1 Can of Tomato Paste(the small can)
2 Carrots chopped
1/2 Onion chopped
4 gloves of garlic
4 tbsp Chili powder(You can add more if you like.....I do)
1 tbsp of Cumin
1 tsp salt
1 tsp pepper
3 tbsp Olive oil
1 Lemon

The low down........
Chop up your onions, carrots and garlic( it does not have to be a perfect chop as you will be putting this soup in the blender) cook them over medium heat in the olive oil until the carrots and onions are soft.  Now add the Chili, Cumin, Salt and add the tomato paste.  Cook this for about 2 minutes or so.  Now add the Vegetable broth, water and lentils.  Bring it to a simmer then cook for an additional 20 minutes.  Pop into the blender I DO NOT put the lid on as it will pop off on you with the heat so please DO NOT PUT THE LID ON......just fill it half way and place a tea town over the top of the blender.  Once you have blitzed everything you are done.  Put your yummy soup in a bowl and squeeze the lemon into the soup.
